My family gets the best, well prepared meals when we go camping. Why is that? With no room for error and a sturdy menu at my finger tips, everything gets planned well ahead of time. I have to ensure that I have everything we need as the nearest grocery store is usually a good 30 minutes away and the selections and prices are usually not the greatest.
You would think I cooked or rather my husband barbecued every night, didn't you? Not so. I ensure that my family has a well rounded meal at every meal. The meals of hotdogs and hamburgers have been thrown out with yesterday's trash. On our camping trips we have pasta (as the true Italo-Canadians that we are), chilli (I have to throw in some South American tradition) and of course a night of barbecue.
I always prepare the main staples at home. For example, I will make a lean meat, veggie filled sauce and refrigerate it. I will then make the actual pasta fresh at the campground. It really isn't that difficult to boil some water and add noodles, now is it. Now the chilli is made completely at home as I like to simmer it for a good three hours and there is no way I am spending three hours at a camp site, with no real wash basin, chopping, mixing and simmering. Serving the chilli with whole wheat tortilla wraps, my family with be fiesta-ing with full tummies. Cold salads as in chick peas, beans and leafy tomato, cucumber, onions and peppers become our lunch; as does grilled chicken sandwiches or wraps. Fresh veggies, hummus and fresh fruit will be our hydrating snacks.
I know many of you may wonder, "why do you prepare so much if you are camping? You could just barbecue all three days." Yes I guess I could, but with the inevitable marshmallow feast that my children will partake in later on in the evening, I want to ensure that they get some sort of nutritional goodness. This is the one thing I can control, dinner. By teaching them that treats are reserved for after a wholesome meal, then hopefully they will take that with them when they get older and they are on their own. By adding the colour of the rainbow to their chilli meal and pasta sauce, I have ensured that they are filled with vitamins and minerals so that they can run around all day and enjoy the many wonders that will be our temporary home.
